You can use that GvE version too, but I sure if that can doubt, due to how it's probably not canon.
Yeah essentially if he would have to adapt to Earth or something, he'd have to encounter him initially and somehow survive all the things thrown at him, take a few weeks to heal and adapt, and then come back. Which just seems unlikely
I'm gonna be honest, while I do think the Evolution is a factor which we haven't seen the full extent of people really be out here being like "well it wasn't in the movie so it has no factual evidence" and to that I say that motherfucker went from this:

Like I dont think it's an insane stretch to say he can probably grow some longer and stronger arms, that being said though yeah he isn't gonna evolve in the middle of a fight
He could to, he just would need to cool his body down
Evolution in Shin is definitely a factor, but it takes a long time and requires him to be pretty well exposed to the threat he needs to adapt to. If the opponent returns before Shin is finished recharging his energy, they normally take the win
I can get him evolving into something more powerful, but in a fight? Yeah, not happening. Requires way too much in such little time.

Shin was OP in the context that the human cast had never seen something like him before and he could counter most military forces pretty well. Against other kaiju, it'd be a different story, where it would either require Shin to be pre-evolved pretty high or he'd be given time to adapt
Basically a Godzilla that has the Thing vibes, and lycanthropical ability all combined altoghether

Shin Gojiwa would have to fight another monster and survive inyorder to grow or mutate a counter, meow.
